Vinification: Soft pressing with pneumatic presses, settling of the must, fermentation with controlled temperature (15-17 ° C) and selected yeasts.
Aging:  on the stainless steel tanks for three months.
Secondary fermentation: Charmat in stainless steel pressure tanks, with frequent agitation in order to facilitate the transfer of the yeasts’ noble substances.
Tasting notes: Pink salmon color with fine bubbles. Floral aromas, notes of strawberries and cream, combined with a crisp mouth feel of sweet oranges and peaches. Ideal companion for aperitifs, pasta with fresh cheese and fruit desserts.

Serving temperature at 6-7 ° C in flute glass

Aglianico: Already grown in remote times in southern Italy, particularly in Campania, Basilicata and Apulia, this vine was apparently introduced by the Greeks at the time of the foundation of their colonies along the Tyrrhenian coast. There are several interpretations regarding its name. At first derived from the Greek Ellenico or Ellanico; another origin of the name could be that of Gaurano-Gauranico, which defined one of the Falerno varieties. Its spreading was a consequence of its renown, so that it finally became the most widespread vine in southern Italy.
